Cocktail History

The Between The Sheets is a classic brandy cocktail that was created by bartender Harry MacElhone at his establishment Harry’s New York Bar in Paris, France in the 1920s. It’s considered the cousin of the Maiden’s Prayer, another classic recipe made with rum and citrus, but the Between The Sheets calls for Cognac instead of gin as its base.

Cocktail Ingredients

To make this cocktail, you’ll need the following ingredients:

Cognac: This is one of the base spirits. We used Courvoisier VSOP Cognac because it has a rich mouthfeel, adds notes of peach, almond, and cinnamon, and brings a delightful brandy spice at the end.

Dark Rum: This is the other base spirit. We used Gosling’s Black Seal 151 Proof Rum because it offers rich rum flavor.

Triple Sec: This is an orange liqueur. It adds sweet citrus flavors that balance out the other dry ingredients. We went with Cointreau because it’s one of the highest quality triple secs on the market.

Lemon Juice: This adds sour citrus flavors for balance. We prefer to use fresh citrus juice because it’s less bitter than the bottled stuff and tastes better.

Orange Peel: This is the garnish. It is flamed for a smoky aroma and adds sweet orange flavor when dropped into the drink.

Tasting Notes

The Between The Sheets features the delicate aroma of the eau-de-vie, a deep dark liquor taste from the rum, and a hint of lemon.

Our Opinion of This Cocktail Recipe: We thought this drink was so delicious that we both immediately added it to our list of favorites The oakiness mixed with the brightness of the citrus is truly a delight, and the flamed orange garnish adds drama to an otherwise simple drink.

Ingredients
 ¾ oz Cognac
 ¾ oz Dark Rum

Method

Add brandy, dark rum, triple sec, lemon juice, and ice to a shaker.

Shake for 10-20 seconds.

Strain into a cocktail glass.

Flame orange peel and add to glass as garnish.
