The Parasol is a brunch sparkling wine-based cocktail recipe that was created by Paul McGee at RPM Italian in Chicago, Illinois. This variation was adapted an issue of Saveur, an online food, wine, and travel magazine.

The Parasol Cocktail Recipe

Ingredients
 3 oz Sparkling Wine
 ¾ oz Lemon Juice
 ½ oz Lillet Blanc
 ½ oz Elderflower Liqueur
 ½ oz Homemade Honey Syrup (Click for Recipe)
 1 Lemon Twist
Method

Add lemon juice, Lillet Blanc, elderflower liqueur, honey syrup, and cubed ice to a shaker.

Shake for 10-20 seconds.

Strain into a champagne coupe or flute.

Top with sparkling wine.
