Cocktail History

The Kelly Kapowski is a Sips From Scripts original mocktail that we made as a recreation of a similar drink we tried at LoLo American Kitchen, a restaurant and bar in Stillwater Minnesota. It pairs cucumber with arugula, ginger, celery, lemon, and paprika and tops them with sparkling water to create a refreshing yet unique non-alcoholic drink great for a hot day.

Cocktail Ingredients

To make this cocktail, you’ll need the following ingredients:

Soda Water: This is water that has been infused with carbon dioxide gas under pressure. It stretches the drink and adds some fizz. We used Topo Chico because it’s light, essentially flavorless, and refreshing.

Ginger Syrup: This is a sweetener that gives the cocktail its spicy ginger flavor. We made our syrup using Alex’s sous vide recipe.

Lemon Juice: This adds sour citrus flavors for balance. We prefer to use fresh citrus juice because it’s less bitter than the bottled stuff and tastes much better.

Celery Bitters: These add celery and spice flavor for more complexity. We used Fee Brothers Celery Bitters.

Cucumber Slices: These are muddled in the drink to add fresh cucumber flavor.

Arugula: These are also muddled in the drink to add fresh arugula flavor.

Paprika: This is added to the rim to add a hint of spice as you sip.

Cucumber Ribbon: This is the garnish. It adds more fresh cucumber aroma and flavor.

Tasting Notes

The Kelly Kapowski features light cucumber and citrus aroma and the refreshing taste of cucumber water with hints of paprika, arugula, celery, and ginger.

Our Opinion of This Cocktail Recipe: We both really enjoyed this mocktail! According to Kendall, it is exactly as refreshing and delicious as she remembers it being when she tried it back in 2017. Alex decided to add a bit of cucumber vodka to his, and he said it made it even better.

Ingredients
 Soda Water
 ½ oz Homemade Ginger Syrup
 ¼ oz Lemon Juice
 2 dashes Celery Bitters
 2 Cucumber Slices
 1 Handful Arugula
 2 tsp Paprika
 1 Cucumber Ribbon

Method

Pour paprika onto a plate, rub outer rim of a lowball glass with lemon juice, and roll glass in paprika until coated.

Add cucumber slices and arugula to a shaker.

Muddle gently.

Add ginger syrup, celery bitters, and ice.

Shake for 10-20 seconds.

Strain into paprika-rimmed glass filled with fresh ice.

Top with soda water.

Garnish with cucumber ribbon.
