Cocktail History
The Lemon Thyme Gin & Tonic is a Sips From Scripts original cocktail that was created as a variation of the classic Gin & Tonic. It uses the original template of gin with tonic water, but it calls for a lemon-flavored spirit, adds lemon juice and homemade thyme syrup for more complexity, and tops it off with of Fitch & Leedes Indian Tonic Water.
Cocktail Ingredients
To make this cocktail, you’ll need the following ingredients:
Lemon Gin: This is a type of gin made with lemon, juniper berries, botanicals, and alcohol. We used Malfy Gin Con Limone because it has a refreshing botanical flavor backed by zesty and bright lemon flavor. For a mocktail version of this drink, try MONDAY Zero Alcohol Gin in place of the gin.
Lemon Juice: This is the liquid juice of a lemon. We used freshly squeezed lemon juice.
Thyme Syrup: This is a sweetener made with thyme leaves, white sugar, and water. We made ours at home using Alex’s stovetop recipe.
Tonic Water: This is a carbonated water that has been infused with quinine. We used Fitch & Leedes Indian Tonic Water.
Lemon Slice: This is a slice of lemon that has been cut into a half wheel shape.
Bartending Tools
To make this cocktail, you’ll need the following bar tools:
Jigger: This is used to measure and pour ingredients. We used the Japanese jigger from the A Bar Above 14-Piece Silver Bar Set.
Bar Spoon: This is used to stir ingredients. We used the Barfly Stainless Steel Teardrop Bar Spoon.
Paring Knife: This is used to cut ingredients. We used the OXO Good Grips 3.5 Inch Paring Knife.
Juicer: This is used to juice citrus. We used the ALEEHAI Manual Fruit Juicer.
Tasting Notes
The Lemon Thyme Gin & Tonic features citrus aromas, the immediate taste of lemon thanks to the fruit juice and gin, a slight sweetness with herbal notes from the thyme syrup, and the classic bitter finish from the tonic

Recipe
Add gin, thyme syrup, lemon juice, and cubed ice to a lowball or highball glass.
Stir for 10-20 seconds.
Top with tonic water.
Stir for 5-10 more seconds.
Garnish with lemon wedge.
