Cocktail History

The Matador Variation is a tiki tequila cocktail that was created by Jesse Estes, an agave spirits expert and the author of Tequila Beyond Sunrise; however, we first came across the recipe while watching Steve The Bartender’s Youtube channel. Although its name isn’t very creative as Steve points out in his video, it uses the familiar ingredients of the original, including tequila, pineapple, and lime, but adds Green Chartreuse for additional herbal notes.

Cocktail Ingredients

To make this cocktail, you’ll need the following ingredients:

Tequila Blanco: This is the base spirit that adds agave flavor. We used Casamigos Tequila Blanco for its sweetness and notes of grapefruit and vanilla.

Green Chartreuse: This liqueur adds its unique sweet, spicy, and smooth flavor and distinctly herbal finish with notes of mint, sage, gentian, apple, and vanilla.

Pineapple Juice: This adds sweet and fruity pineapple flavor. We prefer fresh pineapple juice, but you can substitute canned juice if that’s easier than juicing an entire pineapple.

Lime Juice: This adds sour citrus flavors for balance. We prefer to use fresh citrus juice because it’s less bitter than the bottled stuff and tastes much better.

Agave Syrup: This is a sweetener that is made from the fluid inside agave plants. We made our own using Alex’s recipe.

Pineapple Slice: This is one of the garnishes. It adds fresh pineapple aroma and flavor.

Lime Wheel: This is the other garnish. It adds a bit of lime aroma and lime flavor when dropped into the drink.

Tasting Notes

The Matador Variation features aromas of pineapple, lime, and tequila and has a delightfully sweet pineapple-forward taste with unmistakable tequila flavor throughout plus Chartreuse notes in the back of the mouth before ending with a tart and complex herbal aftertaste.

Our Opinion of This Cocktail Recipe: We both loved the great flavors and fun complexity it offered, and we will definitely be making it again once the weather warms up.

“This drink is very good and quite complex, mostly due to the combination of tequila and Chartreuse. It’s delightfully sweet as a tiki drink should be, but it has some serious herbal character, and the taste of tequila in anything is pretty unmistakable. Although several versions of the Matador are out there, in my opinion, this one is the Matador I’d make again.”

“I didn’t even realize this was a tiki cocktail until we made it. I guess I’m just used to them having rum bases that when I read tequila on the list of ingredients I assumed this wasn’t tiki, but it was delightfully tasty! It’s a nice break from the classic Margarita or Paloma when you want a tequila drink with a little twist from the Chartreuse.”

Ingredients
 1 ¾ oz Tequila Blanco
 ¼ oz Green Chartreuse
 1 oz Pineapple Juice
 ¾ oz Lime Juice
 ¼ oz Homemade Agave Syrup
 1 Pineapple Slice
 1 Lime Wheel

Method

Add tequila, Green Chartreuse, pineapple juice, lime juice, agave syrup, and ice to a shaker.

Shake for 10-15 seconds.

Strain into a cocktail glass over crushed ice.

Garnish with pineapple slice and lime wheel.
