Pumpkin Cider

Cocktail History

The Pumpkin Cider is an autumn cocktail that was created by Nick Mautone and included in his book The Artisanal Kitchen: Holiday Cocktails. It mixes brandy and rum with apple cider, pumpkin, and autumnal spices to create a warm batch drink great for fireside or holiday party sipping.

Cocktail Ingredients

To make this cocktail, you’ll need the following ingredients:

Apple Brandy: This is one of the base spirits. It adds a hint of brandy spice and fruitiness. We used Calvados because it’s one of the highest quality apple brandies on the market and features notes of not only apple but also pear, apricot, and baking spices.

Dark Rum: This is the other base spirit. We chose Mount Gay Eclipse Rum for its notes of banana, vanilla, caramel, and spices.

Apple Cider: This is a freshly pressed juice that gives the drink its sweetened apple and spice flavor. We prefer to use freshly-pressed apple cider available from a local orchard and not the bottled stuff because those tend to taste too sour no matter what brand you get.

Pumpkin Cubes: These are cooked down to add pumpkin flavor and texture.

Butter: This adds buttery flavor and texture. We used a generic brand from our local grocery store.

Granulated Sugar: This is a sweetener usually made from sugarcane. We also used a generic brand of this from our local grocery store.

Whole Cloves: These are spices that add clove’s aroma and flavor. We used Simply Organic Whole Cloves.

Star Anise: This is is a spice that adds aroma and flavor similar to licorice. We buy them in bulk section at our local grocery store.

Cinnamon Sticks: These are spices that add cinnamon’s aroma and flavor. We used Simply Organic Cinnamon Sticks.

Grated Nutmeg: This is the garnish. It adds nutmeg aroma and flavor.

Tasting Notes

The Pumpkin Cider features aromas of apple and baking spices and tastes mostly like apple cider with notes of pumpkin, rum, cloves, and nutmeg throughout and in the aftertaste.

Our Opinion of This Cocktail Recipe: This cider is everything you’d want in a boozy hot pumpkin beverage, and we though it tasted as expected. It’s essentially a potent apple cider with a lot more spice, a hint of the spirits, and a warmth that hits just the right spot on a chilly fall day.

Ingredients
 6 oz Apple Brandy
 6 oz Dark Rum
 1 qt Apple Cider
 8 Pumpkin Cubes
 1 ½ tsp Butter
 1 ½ tsp Granulated Sugar
 6 Whole Cloves
 4 Star Anise
 2 Cinnamon Sticks
 Grated Nutmeg

Method
1

Preheat a large saucepan over medium heat.

Add butter, sugar, and pumpkin cubes.

Sauté pumpkin for 7-8 minutes until slightly caramelized on all sides.

Stir in apple cider, cloves, star anise, and cinnamon sticks.

Reduce heat to simmer and cook until hot.

Remove cinnamon sticks.

Stir in apple brandy and rum.

Ladle into mugs.

Garnish with grated nutmeg.
