Cocktail History

The Outer Rim is a Star Wars cocktail that was created at Star Wars: Galaxy’s Edge, an attraction at Disney’s Hollywood Studios in Orlando, Florida and Anaheim, California. Named for the a sparsely populated region in the Tatoo system where smugglers, pirates, and other outlaws were often found, this copycat recipe was made using the Margarita template. It calls for a simple mixture of tequila, lime, sugar syrup, and black salt, but it also adds in tart açaí liqueur and a sludgy passion fruit garnish to give it some other-worldly edge.

Cocktail Ingredients

To make this cocktail, you’ll need the following ingredients:

Tequila Blanco: This is a spirit made with unaged agave and water. We used Dulce Vida Spirits Organic Tequila Blanco because it has a sweeter agave taste and spicy finish. For a mocktail version of this drink, try Lyre’s Non-Alcoholic Agave Blanco Spirit in place of the tequila.

Açaí Liqueur: This is a liqueur made with açai berries, sugar, and alcohol. This recipe specially calls for Cedilla Açaí Liqueur, but we used FAIR Açaí Liqueur because it has a delicious tart flavor with unique notes of violet and blueberry. For a mocktail version of this drink, try Monin Premium Açaí Syrup in place of the açaí liqueur.

Lime Juice: This is the liquid juice of a lime. We used freshly squeezed lime juice.

Rich Demerara Syrup: This is a sweetener made with Demerara sugar and water. We made ours at home using Alex’s stovetop recipe.

Passion Fruit Purée: This is a fruit spread made with puréed passion fruit, sugar, and water. We used homemade passion fruit purée.

Simple Syrup: This is a sweetener made with white sugar and water. We made ours at home using Alex’s stovetop recipe.

Gelatin: This is a transparent and flavorless food ingredient that is typically made with collagen.

Lime Slice: This is a slice of lime that has been cut into a half wheel shape.

Black Salt: This is a type of volcanic rock salt mined in countries that border the Himalayan mountains.

Bartending Tools

To make this cocktail, you’ll need the following bar tools:

Jigger: This is used to measure and pour ingredients. We used the Japanese jigger from the A Bar Above 14-Piece Silver Bar Set.

Boston Shaker: This is used to shake ingredients. We used the Boston shaker from the A Bar Above 14-Piece Silver Bar Set.

Hawthorne Strainer: This is used to strain out ice and solid ingredients after the cocktail is shaken. We used the A Bar Above Hawthorne Strainer.

Paring Knife: This is used to cut ingredients. We used the OXO Good Grips 3.5 Inch Paring Knife.

Juicer: This is used to juice ingredients. We used the ALEEHAI Manual Fruit Juicer.

Tasting Notes

The Outer Rim has fresh aromas of passion fruit and a sharp salt start that tones down the initial tangy tequila taste. This then blends with sweet fruit and lime before transitioning to slightly bitter aćai flavor that lingers in the throat.

Our Opinion of This Cocktail Recipe: As far as taste goes, you can’t go wrong with the tangy fruit and tequila flavors offered by this recipe, of which we were both fans. That said, the legendary garnish was quite the undertaking, so we’d give you a pass for using a skewer of fresh passion fruit instead if you remade The Outer Rim at home.

Alex’s Take: ⭐⭐⭐
“This attempt at making The Outer Rim was a somewhat of a success. Admittedly, its prep time was long, and its slightly mysterious garnish were tough to nail down. The recipe served at Oga’s Cantina features a passion fruit garnish that sits atop the drink, which looks to have a mud-like texture. Through several guides online and a bit of tweaking of our own, we were able to get something that felt right but didn’t quite have the right density to float atop the drink; our way to mend this was to utilize another method we found online which involved combining the mixture with whipped cream. The end result was a good drink with what I felt was a slightly lackluster presentation, but it was great looking nonetheless when just examining the contents of the glass. Weird garnish aside, the drink was good enough.”

Kendall’s Take: ⭐⭐⭐
“From the template, my guess is this is Galaxy Edge’s Star Wars-inspired version of a Margarita most guests would like. I’ll be honest, I don’t know that I would make it again, at least not with the garnishes. The drink itself is quite tasty, but the puréed garnish was a pain in the butt to make. You could easily omit the passion fruit goop on top and still enjoy the cocktail for what it is. Açaí is a fun addition to the mix, and I can see myself sipping on this at a Star Wars-themed party, just without the black salt and sludge.”

Method

Pour black salt onto a plate, rub part of outer rim of glass with lime slice, and roll in black salt until coated.

Add tequila, açaí liqueur, lime juice, rich Demerara syrup, and cubed ice to a shaker.

Pour into salt-rimmed glass.

Add passion fruit purée, simple syrup, and gelatin to a nitro whipper.

Shake nitro whipper for 30 seconds.

Carefully pour fruit purée garnish into top of glass at an angle so it floats on top of the drink.
