Cocktail History

The Through The Wardrobe is a modern cocktail that was created by Jassy Davis and was first published in the book Winter Warmers: 60 Cosy Cocktails for Autumn & Winter. Inspired by one of the author’s favorite winter-set books The Lion, The Witch, & The Wardrobe, the recipe adds refreshing notes of winter pine, herbal Suze, and frothy egg white to the classic Gimlet template made with gin and lime.

Cocktail Ingredients

To make this cocktail, you’ll need the following ingredients:

Gin: This is a spirit made with juniper berries, botanicals, and alcohol. We used PARK Distillery Alpine Dry Gin because it has a fresh gin flavor and is distilled from glacier freshwater and spruce tips from a national park in Canada. For a low-proof version of this drink, try MONDAY Zero Alcohol Gin in place of the gin.

Pine Syrup: This is a sweetener made with pine tea, white sugar, and water. We made ours at home using Alex’s stovetop recipe.

Lime Juice: This is the liquid juice of a lime. We used freshly squeezed lime juice.

Egg White: This is the clear liquid in an egg. We used fresh egg whites because they add a rich, silky smooth texture.

Suze: This is an apéritif made in France with gentian root, citrus, herbs, and alcohol.

Lime Twist: This is the peel of a lime that has been twisted into a corkscrew shape.

Bartending Tools

To make this cocktail, you’ll need the following bar tools:

Jigger: This is used to measure and pour ingredients. We used the Japanese jigger from the A Bar Above 14-Piece Silver Bar Set.

Boston Shaker: This is used to shake ingredients. We used the Boston shaker from the A Bar Above 14-Piece Silver Bar Set.

Hawthorne Strainer: This is used to strain out ice and solid ingredients after the cocktail is shaken. We used the A Bar Above Hawthorne Strainer.

Paring Knife: This is used to cut ingredients. We used the OXO Good Grips 3.5 Inch Paring Knife.

Juicer: This is used to juice citrus. We used the ALEEHAI Manual Fruit Juicer.

Peeler: This is used to remove the garnish peel from the citrus. We used the OXO Good Grips 2-Piece Peeler Set.

Tasting Notes

The Through The Wardrobe features aromas of sweetened citrus and has a taste that starts with botanical gin balanced with sugar, lime, and a slight air of of woodsiness before finishing with the Suze’s bitter and herbal note.

Our Opinion of This Cocktail Recipe: This recipe was quite tasty even with the Suze, which usually puts a drink at risk for being too bitter for some palates. Because so little was used though, the Through The Wardrobe only had a touch peek through at the end. We both thought the drink was good, but it probably isn’t one we’ll revisit.

Alex’s Take: ⭐⭐⭐
“I commend any cocktail that can include Suze and make it inoffensive to the palate, and this drink manages to do it. Granted, I think it does so by including an almost undetectable amount, but I still get a bit of it there. The recipe is tasty overall, since it’s mostly a simple pine-accented Gimlet with some Suze added, but it’s effective in delivering just that.”

Kendall’s Take: ⭐⭐⭐
“This recipe tasted fairly straightforward and was incredibly palatable even though it calls for Suze, one of the most bitter liqueurs out there. The rinse does leave faint notes of the gentian root, but that’s about all. Otherwise, I really just got a strong lemon-lime flavor from this cocktail. It was good but didn’t blow me away because it was so simple.”

 2 oz Gin
 ¾ oz Lime Juice
 ½ oz Egg White
 1 tsp Suze
 1 Lime Twist

Method

Rinse cocktail glass with Suze by adding it the glass, rolling it around until it's coated, and discarding the excess.

Add gin, pine syrup, lime juice, egg white, and cubed ice to a shaker.

Shake for 10-20 seconds.

Remove ice from shaker.

Dry shake for 5-10 more seconds to emulsify egg.

Strain into Suze-rinsed cocktail glass.

Garnish with lime twist.
